I desperately needed a quick, high protein, relatively healthy breakfast that I could scarf down on the go. I teach English online to kids in China. This means I start my day INSANELY early. I am usually up around 2am. Sometimes, sooner. I frequently forget to eat before I start my classes. This leaves me feeling depleted, unfocused, and STARVING.
Peanut Butter Protein Bites
This is why I created these Peanut Butter Protein Bites. They're quick and easy to make. I store them in an airtight container and grab one as I'm running to the computer in the morning.
The extra protein is filling. It satisfies longer than a carb-heavy snack. It keeps me awake and alert (the tea helps too).
I included blueberries in the recipe to add a fresh taste. Without them, the Peanut Butter Protein Bites can have that dry, peanut butter mouth effect.
These Peanut Butter Protein Bites are GLUTEN-FREE. I have a gluten intolerance, so I need to be better at avoiding it. I also want to build some muscle and just take better care of myself, health, body, life, etc. This recipe was created to aid in that.
Packed with Protein
Whey Protein is an easy, effective way to increase one’s daily protein consumption. It definitely makes me feel full longer. It also gives a boost of energy. I personally use Optimum Nutrition Gold Standard 100% Whey Protein Powder, French Vanilla Creme. It does not make me gag like some other brands.
Peanut Butter is also high in protein… and AMAZING. I love peanut butter. I frequently eat it with a spoon. Peanut butter has heart-healthy monounsaturated fats, which makes it an even better addition to a quick breakfast or snack. I usually buy SKIPPY Natural Creamy Peanut Butter Spread.
Ingredients
1 cup creamy natural peanut butter
1/2 cup brown sugar (1/4 cup for less sugar & less sweetness)
2 large eggs
3/4 cup oats
1/2 tsp baking soda
1/3 cup blueberries
1/4 cup whey protein vanilla
How to Make Peanut Butter Protein Bites
- Preheat the oven to 350 degrees F.
- Combine the eggs and peanut butter in a large mixing bowl.
- Mix the brown sugar, oats, baking soda, and whey protein in another mixing bowl.
- Pour the mixed, dry ingredients into the wet mixture. Stir well.
- Carefully fold in the blueberries. It is okay if some break and smear. But, I personally like the burst of freshness they provide when they don’t.
- Bake for 10-13 minutes.
- Let cool and ENJOY!

Parchment Paper - Parchment paper makes baking so much easier, especially cookie cutting. I LOVE Reynolds Kitchens Pop-Up Parchment Paper Sheets. They are pre-cut, which is perfect if you're a messy baker like me. I don't have to wrestle to rip the correct size of parchment paper from the roll with my batter, egg, or dye covered hands.
