Fruity Pebbles Cookie Recipe

Instructions
Preheat oven to 350°F.
Prepare a cookie sheet with parchment paper or nonstick spray. Set aside.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until pale and creamy.
Add the egg and vanilla extract. Mix.
Add the flour, baking soda, and salt to the wet ingredients. Mix until just combined and a dough forms.
Mix in 1 cup of the Fruity Pebbles.
Scoop dough with a medium cookie scoop or roll into balls of dough with your hands and place 2" apart on the prepared baking sheet.
Lightly press down on the tops of the cookie dough balls to flatten them a little bit (so extra fruity pebbles will stay on top).
Sprinkle the remaining Fruity Pebbles Cereal (1 Tbsp) on each cookie.
Bake for 9-10 minutes or until edges are slightly golden.
Allow to cool on the baking sheet for at least 5 minutes before transferring them to a cooling rack to cool completely.
