½cupButtersoftened
½cupBrown Sugar
¼cupGranulated Sugar
1Egglarge
1teaspoonVanilla Extract
½teaspoonBaking Soda
1 ½cupsFlour
¾cupChocolate Chipssemi-sweet, milk, or dark chocolate - whichever you prefer
½cupFresh Mintfirmly packed
Instructions
Preheat the oven to 350°F.
Prepare a cookie sheet with parchment paper or nonstick spray.
Chop the fresh mint. Put aside.
In a medium mixing bowl, cream the butter and sugars.
Mix in the egg and vanilla extract.
Add the flour and baking soda. Mix.
Fold in the chocolate chips and chopped fresh mint until everything is just combined.
Drop balls of dough about 2 inches apart on a prepared cookie sheet.
Bake for about 10-13 minutes or until lightly golden.
