1cupUnsalted Buttersoftened
¾cupGranulated Sugar
¾ cup Brown Sugar
1teaspoonVanilla Extract
2Eggslarge
2 ¼cupsFlour
1teaspoonBaking Soda
¼teaspoonSalt
2 cupsGhirardelli Peppermint Bark Mix-Ins*
Instructions
Preheat oven to 375 degrees (F).
In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Mix until creamy.
Add eggs and vanilla extract. Beat well.
Mix in the flour, baking soda, and salt.
Add the peppermint chunks and the chocolate chips. Stir well.
Drop balls of the dough on a cookie sheet. I just roll the balls with my hands. Other people prefer using a teaspoon or an ice cream scoop to get perfectly rounded dough.
Bake for 9-12 minutes or until the edges are lightly browned.
Notes
*You can substitute the Ghirardelli Peppermint Bark Mix-Ins with 1 cup semi-sweet chocolate chips and 1 cup peppermint bark chunks.
