Peppermint Chocolate Chip Cookies

These are my absolute favorite cookies. They’re soft, chewy, and delicious. If you like peppermint, you need to try them!!! They are the perfect holiday treat. 

I love to play with traditional recipes and add a twist. I did it with these Chocolate Cookies with Hershey's Candy Cane Kisses and these Hot Cocoa Cookies that are made with real hot chocolate mix.

Peppermint Chunks

Originally, the star of this recipe was Ghirardelli Peppermint Chunks.

Unfortunately, I can no longer find them anywhere.

A chocolate chip cookie with peppermint bark broken in half to show the soft, moist insides that are filled with creamy chocolate chips and delicious white chocolate peppermint bark.

SO, now I use GHIRARDELLI Premium Baking Peppermint Bark Mix-Ins Baking Chips.

It's a blend of semi-sweet chocolate chips, white chocolate chips, AND the original peppermint bark pieces.

Which also means we no longer have to add separate chocolate chips to this Peppermint Bark Chocolate Chip Cookie Recipe, so it's even easier.

It's usually available at Walmart and Target during the holiday season.

How to Make Peppermint Chocolate Chip Cookies

Looking for a beginner friendly holiday cookie recipe? These easy Chocolate Chip Cookies with peppermint bark are quick, festive, and delicious.

Ingredients

  • 1 cup Unsalted Butter softened
  • ¾ cup Granulated Sugar
  • ¾ cup Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Eggs large
  • 2 ¼ cups Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 2 cups Ghirardelli Peppermint Bark Mix-Ins*

Instructions

  • Preheat oven to 375 degrees (F). 
  • In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Mix until creamy. 
  • Add eggs and vanilla extract. Beat well. 
  • Mix in the flour, baking soda, and salt. 
  • Add the peppermint chunks and the chocolate chips. Stir well. 
  • Drop balls of the dough on a cookie sheet. I just roll the balls with my hands. Other people prefer using a teaspoon or an ice cream scoop to get perfectly rounded dough. 
  • Bake for 9-12 minutes or until the edges are lightly browned.

Notes

*You can substitute the Ghirardelli Peppermint Bark Mix-Ins with 1 cup semi-sweet chocolate chips and 1 cup peppermint bark chunks.
