These easy hot cocoa cookies are made with REAL hot chocolate mix and topped with REAL marshmallow creme. They are chewy, soft, and the perfect cozy treat.

These easy hot cocoa cookies are PERFECT for a holiday cookie exchange. Or a fun, easy Christmas treat for your family.

These hot chocolate cookies can be made in one bowl (less dishes!) and whipped up in a matter of minutes. 

They are chewy around the edges, soft in the middle, and taste like a mug of hot chocolate.

Hot Cocoa is such a classic winter treat. Who doesn’t love cuddling up with a mug of hot chocolate on a cold, snowy day?

As kids, my mom always made us hot chocolate after a day of sledding. It’s such a nostalgic treat. 

For these easy hot cocoa cookies, I use REAL hot chocolate mix. I legit open packets of hot chocolate that I already have in the house. 

My family drinks Swiss Miss Hot Cocoa Mix, so that is what I used. Feel free to use your own favorite brand.

Hot Chocolate with Marshmallows

One of the BEST parts of hot chocolate is the marshmallows on top. 

For these easy hot cocoa cookies, I melted Marshmallow Fluff with a little milk to use as a topping.

The only drawback is that, if you stack the cookies, the fluff does cause them to stick together. 

If you layer wax paper in between, it seems to help. 

Another option is to add marshmallow bits to the batter itself. That’s just as yummy!

Decoration Ideas

If you decide to use the marshmallow creme topping, the decoration ideas are limitless, as the photos above and below show.

I like to use chopped up marshmallows and chocolate chips for a simple look.

If I want a more holiday feel, I'll add chopped candy cane pieces or red sanding sugar.

The key is to add any marshmallows, chocolate shavings, sprinkles, or candy cane pieces IMMEDIATELY after icing a cookie with the marshmallow creme topping because it dries fast.

Easy Hot Cocoa Cookies – Made with Hot Chocolate Mix

These easy hot cocoa cookies are made with REAL hot chocolate mix and topped with REAL marshmallow creme. They are chewy, soft, and one of the BEST chilly weather treats.

Ingredients

For the Hot Cocoa Cookies:

  • 1/2 cup Butter softened
  • 1/2 cup Brown Sugar
  • 1 Egg large
  • 1/4 tsp Vanilla Extract
  • 1 1/2 cups Flour
  • 2 packs Hot Cocoa Mix
  • 1/2 tsp Baking Soda
  • 1/8 tsp Salt

For the Topping:

  • 1/2 cup Marshmallow Fluff or Marshmallow Creme
  • 1 Tbsp Milk

Instructions

For Easy Hot Cocoa Cookies:

  • Preheat oven to 350°F.
  • Line a baking sheet with parchment paper. 
  • In a medium mixing bowl, combine the dry ingredients - flour, hot cocoa mix, baking soda, and salt. Set aside.
  • In another medium or large mixing bowl, cream the softened butter and brown sugar together until fluffy.
  • Mix in the eggs and vanilla extract.
  • Add the dry ingredients and mix until just combined.
  • Scoop the dough into 1-inch balls and place about 2" apart on the prepared baking sheet. I like to flatten them a little with my hand.
  • Bake for about 9-11 minutes or until done. 
  • Remove from oven and let cool for about 10 minutes on the baking sheet then transfer to a wire rack to cool completely.

For the Marshmallow Topping:

  • In a small microwave-safe bowl, heat Marshmallow Fluff or another Marshmallow Creme in the microwave for about 15 seconds.*
  • Mix in the milk to help thin the texture.
  • Add the Marshmallow Icing on top of a Hot Chocolate cookie.
  • If using festive sprinkles, crushed candy canes, marshmallows, or any other toppings, add them immediately on top of the Fluff Marshmallow Icing. It sets quickly.
  • Repeat with each cookie, as desired.

Notes

* You can also heat the marshmallow fluff in a small saucepan on the stove. The goal is to melt it a little, so it's easier to ice the cookies with it.
If you accidentally over melt the marshmallow fluff, do not worry. You can have it sit for 20 minutes to firm back up OR you can still immediately top your hot cocoa cookies with the thin marshmallow creme. 
The marshmallow topping, if melted/thinned too much, will run some on the cookies. I personally like this look! It looks like melted marshmallow on hot chocolate. Yum!

    This is a good recipe I recommend it to anyone who is a beginner to baking.
    There is some things I didn’t have for this recipe so I will be make a list of substitutions in case anyone would need it.

    Brown sugar- White sugar plus molasses, white sugar plus maple syrup, coconut sugar, honey, maple syrup, or agave nectar, raw sugars, Muscovado sugar, and plain white sugar.

    Vanilla extract- Vanilla powder, Vanilla sugar, Almond extract, Maple syrup,Honey,
    Bourbon, brandy, rum, or vanilla liqueur, and Vanilla flavored plant-based milk.

    Baking soda- baking powder, self rising flour, whipped egg whites, bakers ammonia, potassium bicarbonate plus salt, and club soda.

    Marshmallow crème- 2 cup or 1 cup mini marshmallows plus 1/4 cup or 2 teaspoons corn syrup.

    Corn syrup- honey, molasses, maple syrup, golden syrup, and stevia.

    There is definitely more options for substitutes than I have listed but I think this will be enough.

    My icing did not get hard. It is still very soft and runny. It is not hardening at all. What can I do?

    I just made these, what a treat! I didn’t have supplies for the topping so I used sprinkles and brown sugar, but they really are great on their own. Perfect consistency, soft and chewy but not too greasy. Also, I tossed in some aromatic bitters while mixing the wet ingredients, it really complements the cocoa! Love!
